How We Got Here
Our History Timeline
From a small kitchen idea to Denver's favourite starbird chicken destination — here's the journey that shaped who we are today.
Co-founders Marcus Rivera and Priya Okafor shared a vision over a Denver dinner: the city needed a chicken restaurant that was bold, fresh, and community-driven. Starbird chicken was born on a napkin sketch.
Our flagship location at 965 S Colorado Blvd opened to a line stretching around the block. Within the first month, we served over 3,000 guests and earned our first Denver dining feature.
Challenged by the pandemic, we launched our full online ordering platform and contactless delivery service. Online orders surged 400% — and our community showed up for us every single day.
Named "Best Fried Chicken in Denver" by Colorado Food & Drink Magazine. We also introduced our now-legendary Honey Garlic and Nashville Hot sauces, beloved by starbirds nationwide.
Launched our full-service catering division and partnered with 12 Denver schools for our "Feed the Future" program — donating over 10,000 meals to families in need throughout the year.
